Basil (basilico in Italian) is one of the main aromatic herbs that can enhance the flavor of any dish. It goes wonderfully with all the ingredients used in Mediterranean cooking. The best basil is grown mainly in Liguria, in the areas surrounding the town of Prà, near Genoa, and in Campania. Liguria is also where the highly prized variety Basilico Genovese DOP is grown. It has smallish, light green leaves and a strong, assertive aroma.
